Stuffed Chicken Breasts with Mushrooms and Cheese

Ingredients
4 skinless chicken breasts
1 cup mushrooms
1/2 cup cream cheese
1/2 cup shredded mozzarella
3 tablespoons butter
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried parsley
Salt and pepper to taste
1/4 cup grated Parmesan cheese

Instructions
1. Preheat your oven to 375°F. Line a baking sheet with parchment paper.
2. Cut a pocket into each chicken breast.
3. In a bowl, mix together the mushrooms, cream cheese, mozzarella cheese, garlic, thyme, parsley, salt, and pepper.
4. Stuff each chicken breast with the mixture.
5. In a skillet, melt the butter.
6. Sear the stuffed chicken breasts for 3-4 minutes on each side until brown.
7. Transfer chicken to the prepared baking sheet.
8. Sprinkle grated Parmesan over the top of each chicken breast.
9. Bake in the preheated oven for 20-25 minutes until the chicken is cooked through and the cheese is melted.
