Chicken Alfredo

Ingredients
Chicken
2 chicken breasts (or thighs), sliced thin
Salt + pepper
1 tsp garlic powder (or minced garlic later)
1 tbsp olive oil
1 tbsp butter
Pasta
12 oz fettuccine
Salted water
Alfredo sauce
4 tbsp butter
3–4 cloves garlic, minced
1 ½ cups heavy cream
1 ½ cups freshly grated Parmesan (not the green can, unless you want “Alfred-no”)
¼ tsp black pepper
Pasta water (the magic fixer)

Instructions
Boil pasta
Salt the water like you’re mad at it.
Cook fettuccine to al dente.
Save 1 cup pasta water before draining.
Cook chicken
Season chicken with salt, pepper, garlic powder.
Heat oil + 1 tbsp butter in a skillet on medium-high.
Cook 3–4 min per side (or until done). Remove and rest.
Make Alfredo sauce (same skillet)
Lower heat to medium.
Add 4 tbsp butter. Add garlic for ~30 seconds (don’t burn it).
Pour in heavy cream. Simmer gently 3–5 minutes
Reduce heat to low and whisk in Parmesan gradually until smooth.
Add pepper + optional nutmeg.
Combine
Toss pasta into sauce.
Add a splash of pasta water until it’s silky and coats the noodles.
Slice chicken and add back on top (or mix in).
