Dill Pickle Macaroni Salad

Ingredients

1 lb rotini or macaroni
1 cup chopped dill pickles
1 cup shredded cheddar
3 tbsp pickle juice

For the dressing:
1/3 cup dill pickle juice
1 tbsp dried dill
1 cup mayo
1/4 cup sour cream
1 tbsp Dijon mustard
Salt & pepper

Instructions

1. Cook the pasta:
Boil in salted water. Drain and rinse with cold water. Toss with 1/3 cup pickle juice.

2. Mix the dressing: Whisk together mayo, sour cream, Dijon mustard, extra pickle juice, dried dill, salt, and pepper.

3. Combine everything: In a large bowl, mix the pasta, chopped dill pickles, shredded cheddar, and dressing.

4. Chill before serving.
