Mongolian Chicken

Ingredients
2 tsp vegetable oil
1/2 tsp ginger, minced
1 Tbsp garlic, minced
1/2 C soy sauce
1/2 C water
3/4 C dark brown sugar
1 C vegetable oil
1 lb chicken breast, bite-sized
1/4 C cornstarch
Large green onions
Sliced mushrooms

Instructions
1. Heat 2 tsp of vegetable oil in a medium saucepan over medium/low heat.
2. Add ginger, garlic, soy sauce, and water to the pan.
3. Dissolve the brown sugar in the sauce, raise heat to medium, and boil for 2-3 minutes to thicken.
4. Remove sauce from heat.
5. Put the cornstarch and chicken in a ziplock bag and shake.
6. Let the chicken sit for about 10 minutes.
7. Heat 1 cup vegetable oil in a skillet over medium heat until hot.
8. Add the chicken and sauté until it just begins to darken.
9. Remove chicken to paper towel to rest.
10. Put the pan back on heat, add chicken back into it and simmer for one minute.
11. Add the sauce, stir for one minute.
12. Add all the green onions and mushrooms.
